The Weeknight Dinner: Honey Goat Cheese Vegetable Pizza


Pizza construction is simple. Most things go well on a pizza, but making one truely delicious is all about the sauce and the combination of flavors. I like to jazz classics up a little bit. Also, a good pizza stone makes a pizza crust really delicious.

I make pizza a lot because it is my boyfriend's favorite evening meal. That or a sandwich. This recipe is simple, the steps are the same. But the combination is so good! Try it out!

1 pizza dough
2 medium tomatos
1/4 a red onion
1/2 cup sliced white mushrooms
1/2 a cup tomato sauce
8 ounces shredded mozarella
4 ounces Honey Goat Cheese


Preheat the oven to 400 degrees. Start by either buying pizza dough or making it your own. You want to leave the dough out at room temperature for at least 30 minutes to puff up and not be cold. At the beginning of making the pizza, put the Honey Goat Cheese in the freezer to get it cold. You'll see why I do this later. Once done, put cornmeal on your pizza stone, and pull the dough till you have a relatively uniform circle, reaching the edges of the stone.


Next, slice the onion and tomatoes into rounds. Slice the mushroom.


Take the pizza dough, and add the sauce. Spread it to about 1/2 an inch from the edges. Next, add most of the mozzarella and then your vegetables. Add the rest of the mozzarella on top of the vegetables.


Once the pizza has the vegetables on top and your cheese, remove the Honey Goat from the freezer. It should come in a log. One of the things I don't like about goat cheese is how hard it is to slice and crumble because it sticks to the knife and your fingers. By slightly freezing the goat cheese, cutting into it will make it flake and break off like a white chocolate bar. This way, you get nice chunks that you can sprinkle on the pizza. Easy solution to a troublesome cheese.


Sprinkle the Honey Goat cheese on top of the pizza. Bake for 20 minutes.
