Jalapeno Popper Grilled Cheese Sandwich


I start this recipe off by saying, it is not that healthy. But there are some days that call for a lot of cheese and butter. Monday was a long day at work. A long day in life. So I decided to make myself something... comforting.... delicious.... bad for me. I present to you, my Jalapeno Popper Grilled Cheese Sandwich. Drool.

2 slices of your favorite bread
*something with a little of a tougher crust but soft on the inside works best for most grilled cheeses*
1 jalapeno
3 tbs cream cheese
2 ounces cheddar
1 ounce shredded mozzarella
2 tbs mayonnaise
2 tbs butter
1 cup crushed jalapeno kettle chips

To start, take your cheddar cheese and dice it up into chunks. In a bowl, add the cream cheese, cheddar cheese and the shredded mozzarella. Mix them together


Next, take your jalapeno and dice it up. Remember, the heat comes from the seeds and inner membrane. Depending on how hot you want this, keep some seeds in with the diced jalapeno. To make it easy, I also like to cut the jalapeno into strips, and then cut them crossways for a good dice.


Add the jalapenos to the cheese mixture and stir it around till they are well incorporated. Take the mixture and add it onto one slice of your bread.


When you get a jalapeno popper, it is usually breaded and deep fried. So I was wondering what I could do to give it a crunch. I could bread it... but then I was breading, well bread. Then it hit me. Kettle Chips! And for an extra Jalapeno flavor, I used Jalapeno Kettle Chips.


Now, the next step breaks a cardinal rule of mine... Mayo on the outside of a grilled cheese. I know a ton of people that do this, and well... I refuse. But I needed the chips to somehow stick to the bread.


So I coated the outside of the sandwich with the mayonnaise. I broke my cardinal rule! Ugh... but it worked. Once you coat the bread, smash each side onto a plate that contains the crushed kettle chips. This should coat your bread with the crunch you are looking for.


Next, get out a large saucepan and melt the butter on medium low. Place one side of the bread into the pan and get it melting!


Now, here is the trick I use to always ensure a melted sandwich. I place a bowl over the top of it while its cooking in the butter to trap the heat. This always makes sure my cheese is melted without over cooking and burning the bread. Once you have let it melt for about 4 minutes, flip it and do the other side.


The only thing left to do is plate it... and eat it. Enjoy :)
